Saba Jebeto has specialised in gourmet ciabatta sandwiches for 23 years, its site says, and it now stands on HaTikva Street in Beer Sheva. It began when its founder rented a small shop in a grey, empty arcade in the city and opened with one employee and one cook, writing the menu as they went; the room was built over the years by the owner and the staff from recycled objects they collected. The dishes carry names of their own: stir-fried entrecôte aged in the house, a hot ciabatta of roasted aubergine with stir-fried vegetables and a hard-boiled egg, seared strips of mulard, chicken livers with mushrooms and walnuts, handmade North African empanadas with meat or vegan, and a vegan plate of plant-based salami. It pours about 30 draught beers, delivers, and has parking beside it and on Henrietta Szold Street. It opens Sunday to Thursday 11:30 to 23:00, on Friday 12:30 to 16:00 and on Saturday night an hour after Shabbat ends.
