A Kurdish-Syrian restaurant on HaShikma Street by Mahane Yehuda market, built around shamburak, a meat-filled pastry baked in a taboon.

Ishtabach is a Kurdish-Syrian restaurant opened by Oren Sasson Levi out of memories of his grandmother Yazi's kitchen, and above all of her shamburak: dough she filled with her siske, beef ribs cooked long and slow. Its site tells that in the years of austerity the women would take what was left of the Shabbat dishes, fold it into fresh dough and bake it with the meat. Levi took the pastry a step further, adding the Indian flavours of his wife Yasmin and meats in new seasonings. Each shamburak comes out of the taboon crisp and hot, filled with Indian-style mashed potato, caramelised onion and chimichurri, with dips on the side; the fillings run from siske, brisket and asado to veal cheek, tongue, Syrian kebab and a vegetarian one. The room is designed to feel like a grandparents' home. It is open from noon to midnight Sunday to Wednesday, to 01:00 on Thursday, and on Friday from 10:30 to 16:00.
